Nous rencontrons Vincent du Domaine Laurens, à Clairvaux, dans l’Aveyron. Cette famille de vignerons depuis plusieurs générations a acheté un alambic de bouilleur de cru pour pouvoir développer une gamme d’eau-de-vie de fruit. Lors de leur reprise, les enfants ont décidé de créer deux gins : Mandra (Renard) et Eiriç (Hérisson). Ils sont issus de la distillation de plantes récoltées dans les vignes et sur les versants des monts alentour.
